Ingredients:

  • 1 boneless milkfish, cut into 6 pieces
  • 1/3 cup soy sauce
  • 2 tablespoons vinegar
  • 2 tablespoons oyster sauce
  • 1/4 cup water
  • 1 tablespoon brown sugar
  • 4 cloves garlic, minced
  • 1 medium onion, sliced
  • 1/2 cup vegetable oil (for frying)
  • 2 tablespoons vegetable oil (for sauteing)

Instructions:

  1. In a large bowl, combine the soy sauce, vinegar, oyster sauce, water, brown sugar, garlic, and onion.
  2. Add the milkfish pieces to the marinade and toss to coat evenly.
  3. Let the milkfish marinate for at least 30 minutes, or up to overnight.
  4. Heat the vegetable oil for frying in a large skillet over medium heat.
  5. Remove the milkfish pieces from the marinade and pat them dry.
  6. Fry the milkfish pieces until they are golden brown on both sides, about 3-4 minutes per side.
  7. Remove the milkfish from the skillet and set aside.
  8. Heat the remaining 2 tablespoons of vegetable oil in the same skillet over medium heat.
  9. Add the onion slices to the skillet and saute until they are softened and translucent, about 5 minutes.
  10. Pour the marinade into the skillet and bring it to a simmer.
  11. Add the fried milkfish pieces back to the skillet and simmer for 5-10 minutes, or until the milkfish is cooked through.
  12. Serve the milkfish steak with rice and enjoy.
